  • 1 ½ c. flour
  • 1 t. baking powder
  • ½ t. baking soda
  • 1 t. salt
  • 2 sticks unsalted butter, room temperature
  • ½ c. granulated sugar
  • 1 c. light brown sugar
  • 1 egg
  • 2 t. vanilla extract
  • 1 c. oatmeal
  • 1 c. semi-sweet chocolate chips
  • ½ c. white chocolate chips
  • ½ c. chopped pecans, optional
  • 1 t. cinnamon

Preheat oven to 350°.

Whisk flour, baking powder, baking soda, and salt in medium bowl.

In another bowl, beat butter and sugars at medium-low speed until just combined, about 20 seconds.  Increase speed to medium and continue to beat until light and fluffy, about 1 minute longer.  Scrape down bowl with rubber spatula.  Add egg and vanilla and beat on medium-low until fully incorporated, about 30 seconds.  Scrape down bowl again.

Mix dry ingredients slowly and gently until blended.  Chill thoroughly.

Roll dough into balls of desired size and bake, or roll into a log of desired diameter and refrigerate or freeze, covering with waxed paper or plastic wrap and foil.  Slice and bake whenever needed.  Place on ungreased cookie sheet and bake on middle rack of oven.

Cook for about 13-16 minutes, turning the cookie sheet half-way through cooking.  Cool and then remove to wire rack.  Do not overcook.

Everyone loves cheesecake, but this Irish coffee cheesecake is quite possibly better than all the good luck on St Patricks Day. Buttery cookie crust, rich Irish cream and whiskey infused filling, and a decadent whiskey coffee ganache make this the perfect addition to any party.

Carnival, or Mardi Gras, in the south, is a serious and delightful season.  Parties, and beads, and parades, and music can’t really equate to anything but a good ole time, right? Some people plan their whole year around it, and understandably so.  The best part, of course, is the food…most importantly, King Cake!
