Independence Day is coming up, and what’s a better way to celebrate than covering your plate with red, white, and blue? We have discovered the most simple, scrumptious summer dessert recipe and we can’t wait to share it with you!
The Ingredients:
You’ll need the following before you get started:
Some dough
If you have a favorite pie crust/ dough, feel free to use that. If not, add these to your grocery list:
1/2 C Butter
3/4 C Powdered Sugar
2 C All Purpose Flour
1 t Baking Powder
1/2 t Salt
Some filling
We used lemon curd, but you can use any type of pastry cream, ganache, or pudding. You choose!
Assorted fresh berries (red and blue, of course!)
Go ahead and preheat the oven to 400°F — Preparation won’t take too long!
The Dough:
If you’re making the dough, start here. If not, skip on down to the next paragraph. First, cream the sugar and butter together, then sift in the dry ingredients. Mix just until they are all well-combined, then turn the dough onto a floured surface. Roll it out and trim it to fit tart/pie tin while pressing it into place. (Tip: For a larger tin add excess dough to corners to reinforce. Don’t worry about it looking pretty; it will be covered with filling when you’re done.)
Now, bake your crust 6-7 minutes, add pie weight (or in a pinch, dry beans work well), and bake another 4-5 minutes until golden brown.
Bringing It All Together:
Now to fill it up! We used a layer of roughly 2/3 C lemon curd and assorted berries. You know your family and friends best, so feel free to choose whatever you think they will enjoy. Top with some dollops of fresh whipped cream and chill until ready to serve.
